Coleslaw

This is almost a no recipe, recipe, because I don't really measure when I make it.  However, the ingredients and measurements below are a good base- you can adjust things like salt and sugar up or down.  

This coleslaw is on the sweeter side, so if you are not down with that, just reduce the amount of sugar.


 

Ingredients:

  • 1/2- 3/4 C. vegan mayo

  • 2 T. rice wine vinegar (can substitute apple cider or white)

  • 1 head or 2 bags pre-shredded cabbage

  • 2-3 tsp. vegan sugar

  • 1 tsp. maple syrup

  • 2 T. pineapple juice ( I like Trader Joe's brand)

  • 1/2 tsp. salt

  • 1/2 tsp. celery seeds ( optional)

  • 1 scant tsp. dijon mustard

  • Few cracks of fresh pepper 


Directions:

Mix all ingredients except shredded cabbage in a bowl.  Next, add cabbage and combine until well incorporated.  Let set in refrigerator for 20 min. Boom.  Your done.
