Easy caesar salad

This is an easy way to get your Caesar salad fix. Sharp, savory, and delicious.


Ingredients:

  • 1 small head of romaine lettuce

  • 1 1/2 C. cubed bread (french, sourdough)

  • 1 small clove garlic

  • 1/4 C. vegan mayo

  • 1 tsp. Dijon mustard

  • 2 tsp. capers (diced)

  • 1 1/2 tsp. vegan Worcestershire sauce ( can sub soy sauce if can’t find)

  • 4-5 T. vegan Parmesan, microplaned ( I prefer Violife )

  • 1-2 tsp. nutritional yeast

  • 1/2 tsp. sugar

  • 2 T. fresh lemon juice

  • 1 T. olive oil (plus more for bread)

  • salt (to taste)

  • fresh cracked pepper  (to taste- I like a good amount)

directions:

Preheat oven 375°

  1. Wash lettuce- dry and set aside.

  2. Cube loaf of bread into about 1 inch pieces.

  3. Place cubed bread on a lined cookie sheet and sprinkle oil .

  4. Add a little salt and pepper on bread and toss to coat.

  5. Place bread in oven and bake about 10 minutes on one side (or until golden brown) then flip and cook second side until golden brown (about another 10 min.)

  6. Microplane garlic (preferred) or chop into fine pieces. With the back of your knife, mash down on the garlic and continue to chop into finer pieces- continue this process until garlic gets “juicy” and a bit of paste forms.

  7. Finely dice capers.

  8. Prep the cheese by shredding with a microplane or a box grater to mix in your dressing (3 or 4 tablespoons).

  9. Add mayo, mustard, capers, garlic, Worcestershire sauce, lemon juice, one tablespoon of olive oil and nutritional yeast to a bowl and mix until well incorporated. You could blend this in a blender for smoother consistency, but I can never be bothered. Up to you.

  10. Mix in Parmesan 3-4 tablespoons of cheese (set the rest aside for finishing your salad) and add a few cracks of pepper and a pinch of salt (if needed).

  11. If you like a thinner dressing, add 1-2 tsp of water.

  12. Taste the dressing and adjust any seasonings to your liking.

You can chop the romaine in to small or large pieces or leave the big leaves to cut down in the bowl after presentation. I like to toss the lettuce in a little dressing and then add croutons and then drizzle a little more dressing on top. Finally grate or shave some parm on top and hit it with a few more cracks of pepper.
