Blueberry Pineapple Smoothie

This is one of my favorite smoothies.  I love the combination of blueberries and pineapple, and the little hit from the cinnamon gives it an extra depth of flavor.  Enjoy as a drink or a smoothie bowl.

INGREDIENTS:

  • 2 ½ C. Blueberries (frozen)
  • 1 C. Pineapple (frozen)
  • 3 pitted Medjool dates
  • 1 tsp. Vanilla extract (or powder)
  • ½ tsp. Cinnamon (preferably Ceylon)
  • 1-2 C. Water (depending on desired thickness)
  • 2 drops Liquid stevia (I use the Trader Joe's brand)

 

directionS:

In a blender (hopefully, high-powered), put blueberries, pineapple, dates, cinnamon, vanilla, and stevia.

 If you want a smoothie bowl, add 1 cup of water, 1 1/2 cups for a thick smoothie, and 2 cups for a thinner smoothie. 

Blend the ingredients until mixed and at desired thickness.  Check for sweetness, if you need more, drop a little bit more of the stevia.
