French Toast

Your run of the mill French toast recipe uses an egg to bind all the ingredients together.  So to make this vegan, a substitute is needed.  There are a few options, like using chia seeds or the Vegan Egg (which would probably work really well here).  However, I chose the cheap and easy option- aqua faba.  It's just the liquid you get from a can of chickpeas. Crazily enough, it's a great binder and it's my go-to when baking.

This recipe is super easy.  Try it out and let me know what you think.

Ingredients:

  • 1/4 C Plant milk (I prefer cashew or soy for this recipe)

  • 2 T Vegan butter (melted)

  • 6 T Aqua faba (liquid inside of a can of chickpeas)

  • 2 tsp. Vanilla extract

  • 2 T Granulated sugar (can find vegan at Sprouts or Whole Foods)

  • 3/4 tsp. Cinnamon

  • 1/4 tsp. Nutmeg(freshly grated, preferably)

  • Pinch salt

  • 3 tsp. Canola oil (plus more if needed)

  • 4-6 slices French bread (day or two old, preferably)

Optional:

  • Maple syrup

  • 1/4 C Fresh or frozen berries (for topping)

  • 1 T Powdered sugar (for sprinkling)

Directions:

  1. Turn on oven to 300°

  2. Slice bread into 1-inch pieces and set aside.

  3. In a shallow bowl that is large enough to lay your slices in- add milk, butter, aqua faba, extract, sugar, and spices.

  4. Whisk ingredients together until well combined.

  5. Heat a large pan over medium-high heat and add oil.

  6. While oil is heating, dip your bread slices into the milk mixture and coat for about 15 seconds on both sides.

  7. Add your slices to the hot pan and cook the first side about 2-3 minutes or until golden brown.

  8. Flip and brown the second side. By now, your pan has probably gotten pretty hot, so check and see if you need to turn down the heat a bit.

  9. Once the second side is brown, turn the temperature to low or medium low and let toast cook for another couple of minutes to ensure the inside is cooked- you want it to be moist (sorry if you hate that word), but not too soggy.

  10. As you finish the slices, put them on to a plate and place in the oven to keep warm while you are cooking the rest.

When you are all done, pour over the maple syrup and sprinkle powdered sugar on top.  In addition, you can serve up with some berries or slice up some bananas and drizzle with chocolate or just keep them plain and simple- however you like it, go for it!
