Sausage Rolls
This is a quick appy that even meat eaters will enjoy ( my dad is OBSESSED!) If you don’t like or can’t get your hands on fig jam, you can leave it out all together and make a maple mustard dipping sauce instead. But believe me, the fig butter/ jam combo with the spicy sausage is B O M B.
INGREDIENTS:
Beyond Meat Sausage (spicy Italian, 1 package)
Vegan puff pastry (1 package, thawed)
6 Tbsp. Fig butter/jam
2 Tbsp. Vegan butter or oil
1/4-1/2 C. Dijon/ spicy brown mustard (for dipping)
pinch of flour (for rolling)
Preheat oven to 400°
Directions:
Unfold thawed puff pastry and lightly roll out on a light floured surface // cut into 16 squares// add a dollop of jam to each square and spread over pastry // cut the 4 sausages into 16 pieces ( split each down the middle, then cut in half to get 4 pieces per sausage) // place a piece of sausage onto each square and roll up // place seam side down on parchment lined baking sheet // brush with melted butter or oil // Bake until bubbly and pastry is puffed and golden brown-serve with mustard sauce for dipping.
