waffles w/ chocolate sauce
INGREDIENTS:
2 C. all-purpose flour
4 tsp. baking powder
1 tsp. cinnamon (optional)
2 T. sugar (granulated)
3/4 tsp. salt
1 3/4 C. almond milk
1/4 C. melted vegan butter
1/4 C. oil
1 tsp. vanilla extract (pure)
1/4 tsp. almond extract (pure)
6 T. chickpea brine (aquafaba)
{Chocolate Sauce }
1/4 C. chocolate chips (semi-sweet, vegan)
2 T. plant milk
1/2 tsp. vanilla extract (pure)
1/2 tsp. cinnamon
DIRECTIONS:
Preheat oven to 250°
Spray your waffle maker with non-stick cooking spray (if needed) and set on desired setting ( I like mine on the highest ), so the iron will be hot and ready when your batter is.
In a large bowl, add flour, baking powder, salt, sugar, and cinnamon. Mix until ingredients are well combined.
Make a well in the middle of your bowl (push the dry ingredients to the sides, leaving a hole in the center) and add chickpea brine.
Then, slowly add milk, butter, and oil a little at a time until fully incorporated. But, as usual, you do not want to over-mix, which will result in a tough product. So if there are lumps, that's cool. Just make sure that there are not any spots of flour that aren't mixed in- you will know them when you see them, they look like little flour islands floating in your batter.
By now, your waffle iron should be ready. I suggest using a ladle to transfer the batter to the iron. When doing this, start from the middle and slowly spread batter out to the edge so that it does not spill out of the waffle iron when you close the lid.
When the waffle is ready, I like to put on to a plate and place in the warm oven until all of the waffles are made. If you want to keep them crispy, don't stack them up on top of each other, keep them on individual plates.
If you are going to make the chocolate sauce, while the waffles are staying warm in the oven, heat a small sauce pot on medium high heat. Fill half-way with water and bring to a boil. When water has come to a boil, reduce the heat to a simmer and set a glass bowl on top of the pot and add chocolate chips, milk cinnamon, and vanilla. Just in case you have never done this before, this is called a double-boiler method or Bain Marie. You see, chocolate easily burns, so by using the double-boiler, you can heat the chocolate without it touching the heat source. The chocolate melts gently and is protected from the heat.
As the mixture starts to heat up, stir it so that it starts to melt. Keep stirring the chocolate until all the chips have melted and a sauce has formed- this should take about 5 minutes. When the sauce is ready, it will be smooth, silky, and shiny- remove from heat.
Now, you can assemble your waffles. Add maple syrup and drizzle the chocolate sauce or chop up some bananas or strawberries- if you are really going for it, nuts and whipped coconut cream are amazing too.
